abstract The present invention relates to a method for producing an alcohol, comprising: (a) mixing a tripeptidyl peptidase, predominantly having exopeptidase activity, with a starting material or fraction thereof before, during, or after fermentation of said raw material or a fraction thereof; and (b) recover an alcohol. Uses of a tripeptidyl peptidase and by-products of alcohol production obtainable by the method of the invention are also provided.
