The present invention relates to: a complex of vegetable oil and whey protein having a whey protein adhered to the surface of a lipid globule of a vegetable oil; a complex of vegetable oil and whey protein obtained by the mutual contact of a lipid globule of a vegetable oil and a whey protein in an aqueous solution, wherein the ratio of vegetable oil to whey protein is 1:0.002-2.5 by weight; and a method for producing a vegetable oil and whey protein complex, which involves a step of bringing together a whey protein and a lipid globule of a vegetable oil in an aqueous solution. |
