abstract Summary High Ooleic Oil Oils The present invention relates to lipids extracted with high levels of, for example, 90% to 95% by weight of oleic acid. The present invention also provides genetically modified plants, particularly oilseeds such as safflower, which may be used to produce lipid. In addition, methods are provided for genotyping and selecting plants that can be used to produce lipid.
