An innovation is the immobilization of yeast cells of the genus Saccharomyces spp. or others suitable for the production of fermented beverages and/or enzymes in alkali metal alginate gel and other gels and additives, so that the yeasts remain viable, and/or the enzymes remain active for application in used bioreactors in batch fermentation processes for the production of beverages. |
