abstract | enterocin production process from microbial development in soy flour-agar substrate. due to their antimicrobial properties, bacteriocins are used as biopreservatives in several products, however, their high production cost has still been a relevant factor that prevents their widespread use in the food industry. in this context, the present invention enables the production of enterokines from a production process consisting of five phases (i. preparation of the culture medium; ii. bacterial inoculum; iii. bacterial development; iv. obtaining the enterocin; v. treatment of bacteriocin and elimination of interferents) and which uses a culture medium consisting of soy flour, dextrose, polyoxyethylene sorbitol ester and potassium phosphate, in which a microorganism of the enterococcus genus is inoculated, for the production of enterokines (and ), which have activity against pathogenic bacteria and indicators of food contamination. |
