abstract The present invention describes the process of producing exopolysaccharides by enzymatic synthesis, using the levansucrase of Bacillus subtilis natto. This microorganism is recognized as safe for human and animal health (GRAS). The exopolysaccharides synthesized by levanasucrase showed high yields and excellent cosmetological properties. Thus, this biomolecule can be promising in the segment of the cosmetic industry, improving skin health by preventing aging and presenting a high hydration power.
