the present invention relates to a probiotic drink produced with the excess of lychee harvest and the yeast saccharomyces boulardii, originally isolated from the fruit itself. the invention proposes the use of excess lychee production for the production of a drink with probiotic properties and potential health benefit. the final drink has a typical lychee flavor and aroma, a sweet and slightly acid flavor, pleasant sensory characteristics, low residual sugar, low alcohol content, body of the drink and carbonation typical of a frisante, with 3 to 7% ethanol and 4 the 8th brix. |
