abstract | refers to gelatin hydrogels (h) containing lactic acid (5), glacial acetic acid (6) or a mixture (m) of both in its formulation, which is obtained from a process with simple execution steps, where a mixture (e1) of gelatin (2), water (1), transglutaminase enzyme (3) and organic acids (5 and 6) is prepared, followed by drying (e6) of the material obtained (7) and, which, for being used as a bactericide in the food industry, it is rehydrated (e8) with water (1). the gelatin hydrogels (h) described have proven bactericidal action for gram-positive and negative pathogenic microorganisms, and can be used to sanitize and disinfect surfaces and equipment in the food sector, due to their compatibility with the sector, in order to enable reduction of consumption of running water in these processes. |
