abstract | powdered dairy compound with the addition of microencapsulated spirulina and the process for obtaining said compound the present invention belongs to the technological food and nutritional sector and refers, more specifically, to a formulation of powdered dairy compound with easy preparation added with microencapsulated spirulina and destined bone health and lipid profile of the elderly, with efficient antioxidant and lipid-lowering action. due to the continuous advances in life expectancy of the world population, it is increasingly necessary to develop foods that are adequate to the needs of the older age group, since, over time, their physiological and nutritional conditions start to present characteristics peculiar. therefore, the present product aims to meet these needs, mitigating some of the main risk factors for developing dcnt in the elderly, such as oxidative stress, changes in blood lipid levels and reduction in bone mass. the composition in question is superior to the state of the art currently known, since it protects the components during the passage through the stages of oral and stomach digestion (acidic ph), being released in higher ph (intestine), and also because it is devoid of bad odors and flavors due to the careful alginate encapsulation process. the present invention further proposes the process of producing said composition. |
