abstract The present invention relates to the product and process for obtaining biodegradable multilayer coatings comprising, in the first layer, breadfruit starch (artocarpus altilis) and chitosan, and in the second layer by alginate, fennel essential oil in the form of nanoemulsion and tween 40®, being incorporated into both glycerol layers. This product has the function of maintaining the quality and postharvest health of tropical fruits. The combination of these multilayer constituents makes the coating effective in reducing metabolic rate and minimizing the development of plant pathogens, which are the main cause of high postharvest losses of fruits and vegetables and huge losses to agricultural production. The application of this process and product is an environmentally friendly, economically viable alternative, as the raw materials are widely available in nature, technologically clean and sustainable, and easy to apply to fruits, and also efficient in reducing metabolic rate and the control of postharvest diseases caused by the action of phytopathogenic microorganisms of wide occurrence in fruits and vegetables.
