abstract The present patent belongs to the field of agribusiness, more particularly, it relates to a composition capable of promoting the decontamination of mycotoxins in grains and other foods. The invention further discloses a mycotoxin detoxification process in grains or cereals or derivatives and a mycotoxin detoxification system system in foods, wherein the mycotoxins of the present invention are preferably aflatoxins. The present invention then discloses a decontaminating composition of mycotoxins present in foods comprising peracetic acid, acetic acid, hydrogen peroxide, water and stabilizing vehicle or propionic acid, ammonium hydroxide, water or ozone or lactic acid fermentation broth. The invention further teaches a process and system for detoxifying mycotoxins in grains or cereals or derivatives, which are conveyed by means of conveyor belts (1) wherein a product suitable for disinfecting the grains or cereals or derivatives by means of at least one nozzle is sprayed. injector (2) having means for producing a jet of said fan-shaped product transverse to the length of said tape (1). the grains or cereals or derivatives then proceed to at least one elevator (3), where they receive at least one cone spray atomizer (4) with product suitable for disinfecting the grains or cereals or derivatives. the spray jet (4) is sprayed by nebulizing nozzles (5) as means for providing said cone-shaped jet.
