abstract The present invention relates to mangaba pulp powder obtained by dehydration in bench top lyophilizer, using a drying aid, maltodextrin, at a concentration of 30%. The presence of nutrients, such as vitamin C and mineral salts, favors the consumption and use of the final product, whether on a domestic or industrial scale, besides the advantage of the drying process used that allows to preserve the organoleptic characteristics of the fruit pulp. The product obtained has the advantages of low humidity and easy rehydration, which facilitates its conservation and use. The storage process is possible due to the conservation of mangaba powder, which when stored in suitable packaging, preferably closed under vacuum, has the chemical reactions responsible for its degradation inhibited, which also favors the commercialization of the product.
