Specifically, the present invention comprises a lipid-protein-carbohydrate complex produced by candida utilis which has applicability in the production of mayonnaise. It also comprises a production process of this complex that enables large-scale production. The present invention is in the fields of microbiology, chemistry and biochemistry.
