abstract | use of yeast saccharomyces cerevisiae strain ufmg 905 as a promoter of reduction of mycotoxins in grains describes the application of yeast to grain preservation avoiding mycotoxin contamination. The proposed technology lends itself to the control of aflatoxin production by grain fungi, generating benefits for human and animal health, and thus this invention relates to the agro-industrial technical sector. This yeast reduces the spread of the fungus by reducing the production of spores and secondary metabolites produced by the pathogen, especially aflatoxins. These microorganisms can be applied directly to the substrate to be protected by dipping or spraying. The proposed formulation presents two functionalities, the reduction of pathogen spread and consequently the reduction of mycotoxin contamination and the use of this yeast as a probiotic. In addition, the yeast has long viability allowing the preservation of the grains over a long period of time. |
