abstract Process for obtaining collagen isolate from slaughterhouse animal by-products. The present invention describes the best conditions for extraction and hydrolysis of collagen from the tunica albuginea of the testes of immunocastrated animals to obtain a collagen isolate and characterizes the chemical and functional properties of the protein product. Collagen can be used in various applications in the areas of food, cosmetics, pharmaceuticals and biological packaging. This is due to the fact that collagen has emulsifying properties, gel and foam formation, stabilizing and clarifying capacity, capacity to form biodegradable packaging and for microencapsulation of substances.
