titleOfInvention processes and equipment for the production of sterile meat meal, bone meal and collagen using the wet route
abstract processes and equipment for the production of sterilized meat meal, bone meal and collagen using the wet route. The present invention relates to the equipment and processes by which meatmeal, bone meal and collagen can be produced separately, using an autoclave in place of the digester and meeting current Brazilian standards. As for the invention in equipment, a double-walled vertical autoclave with an agitator is first used. This replaces, at a lower cost, the digester used on the dry route today. Its tapered shape at the bottom facilitates unloading. the upper part corresponds to a cylinder cut at an angle of approximately 150 to the base to allow the agitator gearmotor to be secured while facilitating the separation of oil from above by injecting water from the bottom. A rectangular sheet metal container is also used to collect the contents of the autoclave upon unloading. At the bottom of this container, which is submerged in the wastewater, there is a side opening through which the bag, which is used as a filter, can be moved without contacting the fat located on the surface of the aqueous solution. In this way, the bag is taken out of the container to be pressed again, now in order to extract excess water. With respect to the invention in the process, bone and meat processing are separated. The bones are milled before drying them using a grooved parallel plate mill, leaving the autoclave immediately after cooking. This innovation eliminates common dust when grinding using a hammer mill. In the case of meat tissues, at the time of discharge, also after cooking, a sturdy cloth bag is provided which allows liquids to pass through and retains solids. Then, the bag is closed and submerged in the hot liquid from the discharge, basically composed of water, where it is pressed repeatedly to extract the residual fat. pressing is completed when the initial elasticity of the flesh tissues is minimized. The meat tissues are then oven dried to be ground. At the same time, wastewater from bone and meat processing is evaporated and collagen is obtained.
