abstract ICE CREATED WITH SWEET MILK SERTE RETAINED FROM NANOFILTRATION PERCESS. Nanofiltrated sweet whey retentate is not only an alternative source of low-cost non-fatty dairy solids in ice cream manufacturing, but also contributes to greater ice cream stability. Ice cream made with nanofiltrated sweet milk whey retentate when subjected to temperature fluctuations has a considerably lower ice crystal growth rate than conventional ice cream. In addition, the proposed patent also has environmental appeal, as whey is a strongly polluting agent and is often seen as a problem for the dairy industry.
