abstract | ANALYTICAL METHOD, WHICH BY CHARACTERIZATION OF VOLTAGE PROFILES, OBJECTIVE VERIFIES THE AGE OF ANIMAL MEAT. An analytical method for checking the age of animal meat using volatile profiles comprising providing a sample of animal meat; finely chop or mince the meat sample, eliminating all visible fat traces to homogenize the sample; place the minced meat sample in an airtight jar; heat the jar with the minced meat sample inside; provide a solid phase microextraction fiber (SPME); introduce the SPME fiber through the bottle seal; keep the SPME fiber inside the bottle for a while; desorb at the injection site of a gas chromatograph; separate the gases thus obtained into a chromatographic column; obtain a chromatogram with a plurality of chromatographic peaks representing volatile organic compounds (VOCs); Identify in the chromatogram VOCs with mass spectrometry and confirm them with chemical standards; selecting a predetermined number of VOCs from the previous step; and adjusting areas that are relative or absolute or volatile organic compound (VOCs) concentrations or partial pressures in a discriminant mathematical function to verify an objective limit of the animal's dental age measurement. |
