abstract ANALYTICAL METHOD, WHICH BY CHARACTERIZATION OF VOLTAGE PROFILES, OBJECTIVE VERIFIES THE AGE OF ANIMAL MEAT. An analytical method for checking the age of animal meat using volatile profiles comprising providing a sample of animal meat; finely chop or mince the meat sample, eliminating all visible fat traces to homogenize the sample; place the minced meat sample in an airtight jar; heat the jar with the minced meat sample inside; provide a solid phase microextraction fiber (SPME); introduce the SPME fiber through the bottle seal; keep the SPME fiber inside the bottle for a while; desorb at the injection site of a gas chromatograph; separate the gases thus obtained into a chromatographic column; obtain a chromatogram with a plurality of chromatographic peaks representing volatile organic compounds (VOCs); Identify in the chromatogram VOCs with mass spectrometry and confirm them with chemical standards; selecting a predetermined number of VOCs from the previous step; and adjusting areas that are relative or absolute or volatile organic compound (VOCs) concentrations or partial pressures in a discriminant mathematical function to verify an objective limit of the animal's dental age measurement.
