abstract "Starch hydrolysis by a fermentative process for the production of glucose syrups". The present invention relates to fermentative processes for the production of glucose syrups from starchy raw materials. One embodiment of the invention relates to a fermentative process of partial or total hydrolysis, wherein the fermenting agent microorganism is an amylase producing fungus. In a second embodiment, the fermentation process comprises exposing the fungus to a growth medium consisting of a very concentrated suspension of amylaceous feedstock with a high C / N ratio.
