abstract "Production of sugar syrup containing fructose and glucose, whether or not enriched with fructooligosaccharides, from sucrose". It consists of a process for the conversion of sucrose into glucose, fructose and fructooligosaccharides by biocatalyst formed by immobilized enzyme inulinase of Kluyvermyces sp. The process consists of the following steps: enzyme production and purification under optimized conditions, immobilization of the enzyme on solid support, fixed bed column assembly containing the biocatalyst, conversion of sucrose syrup into fructose, glucose and fructooligosaccharide syrup under conditions optimized. Final product composition may vary to desired specification depending on operating conditions. The product may be a mixture of fructose and glucose (50% / 50%) or a mixture of glucose, fructose, sucrose and fructooliosaccharides of varying composition. The product obtained from this process is ideal for applications in the soft drink, confectionery, candy, candy, yogurt, etc. industries. In addition, the prebiotic properties of fructooligosaccharides, ie beneficial stimulants of the intestinal flora, will give the product a functional and differentiated character. Since the genus Kluyveromyces is known to be non-harmful to humans (belonging to the American GRAS group) the product can be applied to any type of food. The enzymatic process, moreover, does not produce any undesirable toxic substances and is totally safe.
