abstract "Polypeptide having ACTIVITY lipoxygenase enzyme, polynucleotide, Nucleic Acid CONSTRUCTION, EXPRESSION VECTOR RECOMBINANT, host cell RECOMBINANT, METHOD FOR PRODUCING AN LIPOXYGENASE, oligonucleotide PROBE, METHOD FOR A polypeptide with LIPOXYGENASE ACTIVITY, MASS COMPOSITION, METHODS FOR PREPARE A PASTA OR A PRODUCED BAKED PRODUCT FROM THE PASTA, AND TO OXYGEN A SUBSTRATE, AND, DETERGENT COMPOSITION ". The invention provides sequence information of a microbial protein having lipoxygenase activity and a method of producing the protein by recombinant DNA technology. More specifically, a gene encoding a Gaeumannomyces graminis lipoxygenase was isolated, cloned into an E. coli strain and sequenced. A comparison shows less than 25% identity to known lipoxygenase sequences, the closest being human lipoxygenase 15S. Recombinant lipoxygenase was expressed and observed that recombinant lipoxygenase is glycosylated.
