abstract Method for preparing cheese for distribution by first concentrating milk through separation of the whey to such an extent that the concentrated milk's DM content corresponds to the DM content in the finished cheese and subsequently adding the additives necessary for production of the cheese, e.g. rennet, and packaging the mixture of the concentrated milk and the additives in distribution-ready packaging in which the milk coagulates and the cheese is formed and matured. Through adding to the concentrated milk, preferably together with the remaining additives, a substance with the capacity to form CO2 under the action of lactic acid bacteria occuring in the milk, e.g. citric acid, a controlled development of tubular passages and other hollows characteristic of cheese is made possible during the maturing of the cheese in the said packaging.
