abstract The invention relates to a process for the preparation of an extracellular enzyme alpha-galactosidase [EC 3.2.1.22] -alpha-D-galactoside galactohydrolase catalyzing the hydrolysis of alpha-1,6-galactose residues in wide gamma substrates - mainly oligosaccharides and synthetic substrates such as p- nitrophenyl-alpha-D-galactopyranoside. Alpha-galactosidase is used in the food and feed industry for the hydrolysis of raffinose-type oligosaccharides, mainly from seed bean crops, which increases the nutritional value for humans and non-ruminants and significantly reduces gastric discomfort. According to the method of producing extracellular alpha-galactosidase for culture medium, a waste extract is obtained from the extraction of protein isolates from soy flour. It avoids the difficulties of obtaining the intracellular and extracellular enzymes in the surface culture method, providing a high yield of enzyme.
