abstract The milk delicatessen comprises condensed buffalo cow's milk, sodium bicarbonate and saccharose from 50 to 53 wt.% and has enriched oil-soluble vitamins A and E. The invention also relates to the production of the milk delicatessen wherein the required quantity of unboiled buffalo cow's milk is charged in an open vessel for boiling. To the milk sodium bicarbonate and saccharose are added. The mixture produced is heated to boiling after which it is boiled until the production of condensed cream-like consistence. The sodium bicarbonate is added at temperature of 20 degrees C, and the saccharose at 60 degrees C. After the mixture attains sufficient consistence it is cooled to temperature of 85 degrees C and is enriched with coil-soluble vitamins A and E. The mixture produced is batched and packed in heat-resistant and airtight packaging. 2 claims
