The present invention relates to a coconut cookie, wherein the coconut cookie is made from a dough which is deposited into individual cookies and then baked in a baking tunnel, wherein the dough comprises at minus rice flour, sugar, egg white and coconut granules, wherein at least 40% by mass of the dough is sugar, wherein the ratio of rice flour to sugar is between 0.05:1 and 0.1:1 and wherein the coconut granules are between 0.5 mm and 1 mm. The present invention also relates to a method of making coconut cookies. |
