abstract | The invention relates to a method for removing ethanol from an alcoholic beverage, consisting of the following steps: (i) distilling off a volatile fraction from the alcoholic beverage with the formation of a residual product (2) containing the separated ethanol, but also higher alcohols and flavoring aromatics; (ii) rectifying the residual product (2) in a rectification column (7) in which an enriched pure ethanol fraction (22) is separated from an enriched pure aroma concentrate (30); and (iii) adding the isolated pure flavor concentrate (30) back to the alcoholic beverage from which the flavor concentrate (30) was isolated to restore the taste of the now non-alcoholic beverage. |
