abstract |
To provide a method for producing a bake stable, fat-based filling, comprising the steps of mixing at least a portion of an added fat composition with at least one filler to form a mixture; homogenizing this mixture at a temperature between 37 ° C and 85 ° C wherein the formed homogenized mixture is optionally subjected to a cooling step where an end temperature of less than 35 ° C is reached, and then a stabilization step at a temperature between 12 ° C C and 19 ° C. |
