abstract | The present invention relates to an industrial process for the preparation of fresh croquettes. The method comprises: providing a mashed potato mass that has a temperature of at least 75 ° C and at most 85 ° C; optionally adding one or more ingredients to the mashed potato mass, and mixing the mashed potato mass and said one or more ingredients, thereby obtaining a mashed potato mixture, the mashed potato mixture having a temperature of at least 75 ° C and at most 85 ° C ; shaping by extrusion of the mashed potato mass or mashed potato mixture, whereby a shaped potato mass or shaped potato mixture is obtained, wherein the extrusion takes place by means of an extrusion mold comprising one or more openings and one or more inner walls, each formed by an opening, wherein the surface of at least one inner wall is covered with teflon; and finishing the shaped potato mass or the shaped potato mixture, whereby a fresh croquette is obtained. |
