abstract The invention relates to a method for modifying the adsorption properties of bile salts by dietary fibers. The method uses the measurement of the electrokinetic potential of the fibers so as to adapt it according to the objectives. According to these, the zeta potential is modified by anionic compounds or water-miscible solvents to reduce the adsorption, by cationic compounds, of water-miscible solvents; detergents or salts to strengthen it.
