abstract |
An enzymatic hydrolyzate rich in di- and tripeptides is prepared by subjecting a plasmatic animal protein mixture prepared by thermocoagulation and liquid-solid separation to an enzymatic proteolysis in order to convert at least 50% by weight of proteins into a hydrolyzate containing at least 75% di- and contains tripeptides. The hydrolyzate rich in di- and tripeptides is extracted by liquid-solid separation followed by ultrafiltration. The hydrolyzate is then subjected to a sterilization and drying process. |
