abstract | A BEVERAGE CONTAINING WOOD COMPONENTS nABSTRACT nThe present invention provides a beverage in which the characteristic flavor and nprofoundness of wood components derived from wooden containers such as barrels or nfrom wooden pieces are maintained and yet the bitter and astringent taste of the wood ncomponents is suppressed to thereby ensure that the beverage can be drunk until it nproduces a refreshing aftertaste. nIncorporated in a beverage are (A) 0.4 to 10.0 ppm of galic acid and/or 0.4 to n10.0 ppm of sinapaldehyde, plus (B) 0.2 to 5.0 ppm of limonene and/or 0.1 to 5.0 ppm of n1-terpinen-4-ol. |
