abstract The food preparation process comprises mixing a water dispersible powder with an aqueous liquid and optionally with other food ingredients, said water dispersible powder comprises 30 to 100% by weight of a husked legume seed component (DPS) and 0 a 70% by weight of a carrier material, wherein said DPS component contains 30 to 60% by weight of gelatinized starch and 15 to 35% by weight of legume protein; wherein the combination of the DPS component and the carrier material constitutes at least 90% by weight of the powder; wherein the water dispersible powder has an oil content of at least 0.2% by weight; wherein at least 80% by weight of the particles contained in the powder have a diameter in the range of 10 to 1000 mm; and where at least 90% in vol. of the water insoluble components has a hydrated diameter of less than 150 mm.
