Partially or all of the fats or lipids in dairy products can be substituted for the modified starch. Alternatively, nOSA modified starch can be used as an additive in dairy products. It also refers to compositions of dairy products that include modified starches by reaction with succinic n-octenyl anhydride. Example compositions such as yogurts, sour creams, puddings, cheese sauces, and processed cheese foods containing nosa modified starch are then described. |
