This refers to new strains of Saccharomyces that can be produced on a carbon substrate that allows to totally or partially replace the use of sugar, and its use for the production of yeasts, especially on an industrial scale. Another object of the present refers to a process for the production of yeasts of the genus Saccharomyces in a carbon substrate that allows to totally or partially replace the use of sugar. Claim 1: Saccharomyces strain, characterized in that in the presence of a culture medium comprising a mixture of glycerol and sugar, in aerobic condition, it consumes at least 80% of the glycerol of said mixture, said mixture comprising a proportion of glycerol of at least 20% in sucrose equivalent, the sum of the glycerol and sugar ratios of said mixture being equal to 100% in sucrose equivalent. |
