abstract The present application relates to genetically modified plants and plant cells, to processes for the preparation of genetically modified plants and plant cells, which have a higher activity of a protein with the activity of starch synthase II and a higher activity of a protein with the activity of glucan-water-dikinase. Such plants synthesize starch with greater swelling capacity with hot water. Starches with greater swelling capacity with hot water, as well as procedures for obtaining them, are also subject to the present application. Claim 15: Flours containing a modified starch which can be obtained according to a method according to claim 8 or containing a modified starch according to one of claims 10 or 11.
