A process to modify carbohydrates by reacting with hydroxyl radicals. Hydroxyl radicals can be formed by the photo-reaction of water, peroxide or other suitable chemical substance containing hydroxyl, or by electrochemical decomposition of water, peroxide and other suitable chemical substance containing hydroxyl. Also the compositions and products containing carbohydrates modified by the process. |
