Alpha-galactosidases from hyperthermophilic sources are useful in the treatment of animal feed, by hydrolyzing the galactose oligosaccharides present in animal feed. Thermotoga maritime alpha-galactosidases are useful in the hydrolyzing of raffinose, stachyose and verbascosa, indigestible oligosaccharides commonly found in animal feed compositions. The ability to use these enzymes at high temperatures, that is, those that would normally be found in industrial processes typically associated with the formulation or processing of animal feed, is convenient to add nutritional value to animal feed, and flexibility in processing. Hyperthermophilic alpha galactosidases are also useful as food additives for human foods. |
