A method for preparing a juice that is relatively enriched with beneficial compounds is described. From various fruits and vegetables including blueberries and other members of the genus Vaccinium. The method can be used to produce a juice, for example, cranberry juice, enriched with health benefits, for example, factors that inhibit bacterial adhesion. Other beneficial health factors in fruits and vegetables, which are not fully recovered by conventional processing methods, may include, for example, compounds that lower cholesterol, reduce the risk of various cancers, or reduce the risk of heart disease. |
