The expression of desaturases with different substrate specificities in the plant system allows large-scale production of long-chain unsaturated fatty acids such as docosahexaenoic acids, eicosapentaenoic acid, alpha-linolenic acid, gamma-linolenic acid, arachidonic acid and the like for modification of the fatty acid profile in plants, parts of plants and tissues.
