The expression of desaturases with different substrate specificities in the plant system allows large-scale production of long-chain unsaturated fatty acids such as docosahexaenoic acids, eicosapentaenoic acid, alpha-linolenic acid, gamma-linolenic acid, arachidonic acid and the like for modification of the fatty acid profile in plants, parts of plants and tissues. The manipulation of fatty acid profiles allows the production of commercial quantities of new oils and plant products.
