abstract | The claimed composition is composed of: (A) one or more enzyme complexes; (B) one or more preservative agents; and optionally (C) other food additives. The main function of the enzyme complex (A) is the catalysis of reactions that consume the dissolved oxygen in the beverage and in the empty space that is in the neck of the bottle, without affecting the sensory characteristics of the beverage. The enzyme complex can mainly comprise two enzymes: glucose oxidase and catalase. Glucose oxidase catalyzes the reaction of oxygen with glucose, forming gluconic acid and hydrogen peroxide that is later consumed by catalase, forming water and half of the original oxygen. Preservative agents (B) conserve the drink microbiologically. The following may be used as preservatives, alkyl esters of p-hydroxybenzoic acid or as for example: methyl, ethyl or propyl esters of p-hydroxybenzoic acid. All of them are more active against yeasts and bacteria than benzoic acid, and lower dosages can be used. Together, such preservative agents have a total and synergistic action, avoiding the multiplication of microorganisms. Optionally, other additives such as antioxidants, erythrobic acid and salts thereof and / or ascorbic acid and their salts and stabilizers, such as propylene glycol alginate, can also be added.
