abstract Isolated fragments of nucleic acids encoding plant enzymes involved in the biosynthesis and modification of fatty acids are revealed, where enzymes show sequence homology with membrane-bound fatty acid desaturases. Specifically, isolated fragments of nucleic acids and their complementary ones, encoders of an epoxidizing fatty acid enzyme and a desaturated fatty acid enzyme, each of which is expressed in developing seeds of Vernonia galamenensis. Chimeric genes are also described which comprise said fragments of nucleic acids operatively linked to suitable regulatory sequences, since the expression of the chimeric genes results in the production of altered levels of the protein encoded in the host cells, which is also described. Transformed plants obtained from host cells transformed from higher plants and seeds obtained from said transformed plants are also included as well as a soybean seed that accumulates vernolic acid. In a further embodiment a method for altering enzyme expression levels is revealed. Vernonia galamenensiso fatty acid epoxidizer of Vernonia galamenensis fatty acid desaturase enzyme in a host cell. Still another embodiment comprises a method for producing epoxidized fatty acids in plant seeds and a method for producing said enzymes. A method is also contemplated to obtain nucleic acid fragments encoding all or practically all the amino acid sequences encoding epoxidizing or acid desaturation enzymes. fatty and the products obtained from them.
